Applesauce
6-8 apples, peeled, cored, and cut up
½ cup water or apple cider
½ cup sugar or to taste
Spices to taste: cinnamon, nutmeg
Add water to apples in a large saucepan. Cover and cook over low heat until apples are soft. Stir occasionally. Do not let apples scorch. Put through a food mill for a smooth applesauce or break up with a fork for a chunky applesauce. Stir in sugar and spices and continue cooking until thickened.
Apple Cake
1 ¾ cups sugar
3 eggs
1 tsp. vanilla
1 cup cooking oil
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 cups thinly sliced apples
1 cup chopped walnuts (optional)
Mix first four ingredients until creamy. Add dry ingredients and mix well. Fold in apples and walnuts (optional). Bake in a greased 9”x13” pan. Bake for 40 minutes in a 350 degree oven.
Pear or Apple Crisp
5 cups peeled, cored, and sliced apples or pears
2-4 Tbs. sugar
cinnamon to taste
1/8 lb. butter
Mix apples or pears with sugar and cinnamon and put into an 8x8 baking dish. Cut butter into small pieces and add to mixture.
Topping:
1 cup flour
¾ cup sugar
1 tsp. baking powder
½ tsp. salt
Plus: 1 extra large egg, ¼ lb. butter
Mix dry ingredients together. Drop in 1 extra large whole egg (not beaten). Use a large fork to mix egg into dry ingredients. It will make a crumble mixture. Put over the top of fruit. Melt ¼ lb. of butter and pour over the top. Sprinkle with cinnamon. Bake at 375 degrees for 35-45 minutes.
